My Favorite way to make Chicken Burgers

It is so important to build our meals around good quality protein & vegetables....yep, I think we should aim for this at every meal!  

It is really not as hard as you might think.  

'These burgers are the perfect example. EASY, DELICIOUS, and PACKED with PROTEIN & GREENS.  

They are a win-win in my book!

Like all our meals,  I tend to make enough of these too so that we have it for dinner one night and lunch another day!

Ingredients:

1 pound/.5K of minced (ground) chicken

2 cups of roughly chopped fresh spinach

1/2 cup of finely chopped onion

1 egg

1-2 cloves of minced garlic

1/4 cup of fresh basil OR 1 t of dried basil + 2 t of mixed Italian herbs

Salt & Pepper to taste

*Optional add-in - 100g/4 ounces of crumbled feta

*Optional toppings: Buns (of course!), avocado, tomato

Directions:

Preheat an outdoor grill or frying pan - Medium Heat

While the grill is heating up. Mix chicken, egg, onion, spinach, garlic, herbs, s&p, and feta in a large mixing bowl

Form into 6-8 patties

Oil the grill and cook until no longer pink in the middle - about 15-20 minutes

I often eat mine with sliced avocado and tomato sans the bun but my hubby and my boys always want the bun!

Either way, this meal is protein and nutrient-dense!
