Easy Weekday Salmon

SALMON IN PARCHMENT

This is such a simple weekday meal that is chock full of good nutrients and takes no time at all!  All you need is a baking tray and some parchment paper so the kitchen clean up is super easy after its all done!

Serves 4

4 x Salmon (I prefer skin on)

4 x roughly chopped tomatoes (or any other vegetables of choice

fresh dill (or dried dill works too)

l x lemon quartered

E.V.O.O. or good quality butter

salt and pepper

-First, just break off a decent size of parchment paper for each salmon fillet. Place 1 salmon in the center of each paper

-add 1 chopped tomato (or other vegetables) around each salmon-add fresh dill, salt, and pepper, a bit of oil/butter, and squeeze the lemon on the salmon (leave the lemon in to cook)

-wrap up each parchment and Voila!

So easy!

Cook in the oven at 180C or 350F for about 20 min or until done. (done is about 145F if using a thermometer)**

I also love the combination of tomatoes with mushrooms together. Or instead of Tomatoes, try asparagus or other vegetables in season!

**I usually do another whole baking tray of greens and roast them with a bit of oil and S&P to enjoy with this meal. (just throw it in the oven at the same time)

**Now I know ideally it’s best to get fresh, wild-caught salmon but most of the time I have frozen individually wrapped salmon in my freezer. I just pull them out of the freezer and into the frig to defrost the morning I know I am going to make this dinner!)
