Chia and Coconut Pudding

I love this for so many reasons: it can be breakfast, a snack, or a dessert and any time you choose to eat it, your body will be thanking you!  

Not only is this recipe so simple and deliciously decadent, but it is also packed full of nutrients!

Let’s talk about Chia seeds and why they are getting so much attention. For their tiny size and low-calorie count (which I could care less about), they have a ton of omega 3 fatty acids (which are so good for our brains!)  

Chia seeds are also really high in protein, fiber, and are loaded with antioxidants.  And, when mixed into a liquid, they soak it up and become softer and more gelatinous in texture, which is quite enjoyable in yogurts and puddings.

The other part of this pudding is the coconut milk.  Most of us know that coconuts are an incredibly nutrient-dense food...rich in fiber, vitamin C, E, and a few of the B's.  Now, coconuts are high in saturated fat which confuses a lot of people as to why they are so good for you but here's the thing... The unique fatty acids in coconut milk can aid in weight loss and do so much more too like improve your immune function and improve the health of your skin and hair.  Be mindful about the brand of coconut milk you buy though because they are not all created equal.  

Like all food that comes in a package - check the labels.  Make sure to buy BPA Free cans and try to buy cans of coconut milk that don't have other additives in it.

Here is the oh so simple recipe for this creamy, naturally sweetened Dessert:

1/3 cup of Chia Seeds

1 can (400g/13.5 FL OZ) of Full Fat coconut milk (you can try light too but I prefer the full fat!)

1 tsp of Pure Vanilla Extract pinch of sea salt

1-2 TBS of pure maple syrup or honey (I tend to omit this as I find it sweet enough on its own but you can experiment and find the perfect sweetness for you!)

Blueberries (or any other favorite berries, fruit, nuts, seeds, toasted coconut) to top

Mix all together very well.  

You can also put it all into a mason jar and shake it really well. Let it sit in the refrigerator for at least 2-3 hours.  I think it works best if it sits overnight and then it is ready to serve!
